General Instructions #95 (1957)

When a coupled set of cars is to be uncoupled and one car is to
continue in traffic, the leading car must be used for that purpose
unless it is defective.

The Conductor in charge must arrange, as far as possible, for
passengers picked up on the journey prior to uncoupling to travel in
the leading car, and must direct those who may be in the rear car to
change to the leading car before the cars are uncoupled.

Immediately a set of cars is uncoupled, the employee(s) who performed
this work must place all portable coupling equipment in a position
where it will not foul tram tracks or cause danger or hinderance to
vehicular or pedestrian traffic.

Instructions to Drivers #325b (1957)

When coupling or un-coupling operations are in progress, Drivers of
trams passing on the opposite line must reduce speed and sound their
gongs when approaching and exercise every care to avoid accident to
the staff so engaged.

Since I rarely travelled on the trams at night, I can't comment on the
ec=evening arrangements, but from personal recollection I do know that
cars were added and removed from sets at North Sydney Depot during the
day as traffic required. Normally this would be done on the running
roads, but occasionally the tram would pull into the slip road.
