Your wish is my command. :-)

I started with a 1980 track map and with lots of white-out and a pencil produced the attached.
I used Nearmap as my guide.
I think the junctions are all OK, but I have not tried to update all the crossover locations.
Biggest changes are related to the Docklands development, the City Circle track in Sprong St and the relocation of Batman Ave.
I didn't extend the map to cover Docklands.

Comments and corrections are most welcome.
